As we all come from a different country or a state, we have different choice of dressing styles, customs, values, gestures and definitely a diversity of food choices. I come from India, where each state is a very diverse in its style and the food we eat. I am from northern side of India where the food and dressing style differ from the south side of India. As in America, each state is very unique in many ways however; they might have a very few distinction in the culture and values they practice. As I drive down the streets of Richmond, I have noticed many different Indian restaurants. I have tried most of them, but my favorite one is Anokha. It is a groundbreaking restaurant located across the Short-Pump Town Center in west end area of Richmond. It offers a symphony of Indian flavors and spices. This is my favorite restaurant because I like its food, service, and the Indian environment they have created.

Anokha food is a blend of many spices and natural flavors. I love Indian food because it is a mixture of herbs and spices. There appetizer and dessert is the best. Indian food has a unique texture because of the spices added to the food when it's cooked. Several spice blends are used in Indian food to give a robust flavor to food and yogurt almost always accompanies a meal at the end to cool the taste buds. The popular dish I like at Anokha is tandoori chicken tikka. I love this dish because it is cooked in aromatic makhani sauce. Whenever I try this dish, it provides me with a homemade cooking taste. When I cook this dish at home, I add onion and green peppers in the oil and let it fry for a while. After it is fried, I put garlic/ ginger paste, tomato sauce, and all other Indian spices including coriander, garam masala, red pepper, turmeric powder, cumin seeds. Just to add the flavor to make it curries like, heavy cream is added and then it's boiled for a while for better texture. On the other side, boneless chicken is marinated with yogurt, tandoori masala, cilantro, curry leaves and butter chicken masala is added and cooked in oven for half an hour. At last, when the chicken is all cooked it is added to the curry and I add few cilantro leaves to give a good taste at the end of each bite. When I eat this dish at anokha it brings the same taste and texture as I would cook at home. After all this spicy food dessert is served and my favorite one is Gulab Jamun which is a very famous sweet of India. It is made of light pastry balls in cardamom infused syrup with a coconut garnish. It probably doesn't sound too interesting or exotic but it brings wonders to my taste buds. There is other more sophisticated desserts such as warm custard with double cream topped with caramelized golden brown sugar.

The second element, I love about Anokha is the service. Indian restaurants are all similar in the type of food that they provide. It also depends on the taste which is all dependent on the chef; however,
